Applying the traditional method of Champagne, this marriage between the lovely and elegant white Assyrtiko and the extraordinarily structured xinomavro wine remained on its lees for at least 48 months acquiring a highly complex and unique character that can be envied by several champagnes worldwide.

Delicate fragrances with chalky tones pave the way for a stringent impulse of taste: Wild roses strawberries, raspberries. Persistent, high-quality foaming, achieved with a second fermentation in the bottle (methode traditionelle), with small-sized bubbles to travel and carry freshness to the top of the glass, highlighting all the aromatic character of this exceptional wine.
Domaine Karanika, Amyndeon Xinomavro The aromas are of a wine with long ageing on its lees. Lovely bready, yeasty aromas with hints of smoke and truffles set against a clean background. The wine is bone dry, but incredibly supple. Its elegance defies gravity. You could stick this mature flavour bomb of citrus, nuts and honey into a grand Champagne tasting, and you would be hard pressed to know it wasn’t an extremely good example of Premier Cru from the Montagne de Reims. Such subtlety and elegance. It still tastes young and whilst it could be drunk with pleasure now, it will carry on ageing gracefully for a decade!
